1 chopped carrot, ½ cup whole milk, 4 soaked almonds, 1 tbsp jaggery, 1 tsp ghee, water
Steps to make Carrot Almond Pudding:
1. In a blender add 1 chopped carrot, ½ cup whole milk and 4 soaked and skinned almonds.
2. Blend to form a smooth paste. Transfer paste to a flat stainless steel bowl.
3. Place in a double boiler or in another larger bowl with water and cook for 10-15 minutes, stir continuously until the mixture thickens.
4. Add 1 tbsp jaggery and 1 tsp ghee. Cook for 2-3 minutes.
5. Le it cool and serve.
