Salmon, Pea and Sweet Potato Puree
This puree combines the goodness of salmon, pea and sweet potato puree. Salmon is a rich source of Vitamin B12, Vitamin D, selenium, Vitamin B3, Omega 3 Fatty Acids, protein, phosphorus and Vitamin B6. Peas are rich in Vitamin K, Vitamin C, dietary fibre, copper, phosphorus, magnesium, folate, Vitamin B6, Vitamin A and protein. Sweet potatoes offer phosphorus, Vitamin B2, Vitamin B1, niacin, dietary fibre, potassium, Vitamin B6, pantothenic acid, copper, Vitamin C and Vitamin A.
Ingredients: 350 ml vegetable stock, 1 piece of salmon, half a sweet potato peeled and diced, ½ cup frozen peas
1. Cook the sweet potato chunks, frozen peas in the vegetable stock for about 15-20 minutes on low flame till the sweet potatoes are cooked and become soft.
2. Next add the salmon piece and cover the pan.
3. Turn the heat to medium and cook for 8-10 minutes till the salmon has cooked too.
4. Set aside for cooling.
5. Transfer into a blender and process into a smooth puree.
