Risotto is a traditional northern Italian rice dish cooked in broth to a creamy consistency. Mildly spicy and loaded with veggies, this dish is the perfect combination of flavour and nutrition

Ingredients to make Yummy Yum Risotto:

1 tsp oil, 1 tbsp chopped onion, 1 tsp garlic paste,  2 tbsp washed and drained rice, water, 2 tbsp grated carrot, 1 small floret of broccoli, 1 tbsp finely chopped beans, 2 tbsp chopped spring onion whites, salt, and 1½ tbsp grated cheese

Steps to make Yummy Yum Risotto:

1. Heat oil in a pan.

2. Sauté onion and garlic paste.

3. Add rice and ¾ cup water. Mix and cook for 4-5 minutes on medium flame or till the rice is cooked.

4. Add carrot, broccoli, beans, and spring onion whites. Mix well and add ½ cup water. Cook on medium flame, stirring occasionally till the veggies are soft.

5. Add salt and grated cheese. Mix well and cook till cheese melts.

Mash the risotto lightly and serve warm.
