Vegetable Stuffed Idli

Try this idli recipe which is full of vegetables. Carrot is rich in calcium, iron, potassium, copper, vitamins C and K, it enables healthy growth in children. Beans are rich in vitamin A, K and C, fibre, calcium and iron. Corn is rich in carbohydrates and vitamins. 

Ingredients: Carrot, beans, corn, peas, cauliflower (as per the quantities of idlis you are making in one go), 3 cups rice, 1 cup urad dal (for batter), a pinch of cumin powder, 1/2 tsp coriander leaves finely chopped, salt as per taste

Steps:

1. Firstly, take rice and dal, soak it overnight. Grind it well the next morning. This batter can be refrigerated up to 3 days. 

2. Mix all the chopped vegetables and other ingredients in the batter.

3. Fill up the idli steamer with the batter and let it steam well for about 15 minutes.

Serve little hot with chutney or sauce.
