Vegetable Suji Upma
Vegetable suji upma is a healthier version of suji upma as it is made by using fresh vegetables along with rava. Vegetables are a rich source of Vitamin A, Vitamin C, calcium, iron, Vitamin B6, magnesium, dietary fibre and potassium. Whereas suji or semolina is a rich source of magnesium, protein, dietary fibre, carbohydrates, iron, Vitamin B6. Combine the two and you have a filling and nourishing meal ready!
Ingredients: 15gm suji, 1-2 cups water, 1 tsp. butter, 1 bowl of pureed peas, carrots and beans
1. Dry roast the suji in a pan till it is golden in colour. Set aside.
2. In another pan, melt the ghee. Add water and the pureed vegetables and stir well.
3. Next add the roasted suji and cook till the suji is done.
