Adai idlis are light, fluffy and a very healthy breakfast. In addition, they are made from different lentils, which offer essential nutrients such as iron, potassium, protein, copper, manganese and dietary fiber. 

Ingredients: ½ cup each of chana and toor dal, 2 tbsp each of moong and masoor dal, 1 cup rice, ¼ tsp cooking soda, 3-4 dry red chillies, ¼ tsp hing, 1” ginger, 1 tsp cumin seeds, 2 tbsp sesame oil, 1 tsp mustard seeds, a handful of chopped curry leaves, ¼ cup grated coconut, 1 onion finely chopped, handful of chopped coriander leaves, ½ cup finely chopped or grated vegetables. 

Steps

 1. Soak the rice and dals for an hour. Shift into a mixer jar and grind them along with the dry red chillies, hing, ginger, cumin seeds and salt into a smooth batter. 

 2. Add the cooking soda and stir the batter well.

 3. Heat oil in a pan, crackle the mustard seeds and add the curry leaves. Pour the tempering into the batter. Add the grated coconut, onions, coriander leaves, and vegetables and mix. 

 4. Pour the batter into your idli molds and steam for about 10 minutes. 

Prepare these idlis at home today and serve them with sambar or coconut chutney!
