This is a healthy recipe which is rich in vitamin B6 and carbs. Baba Ghanoush can be made using flat-leaves parsley, eggplants, tahini, olive oil, pepper, salt, lemon juice and 6 pitas. Make sure you do not use excessive oil.
1. The first step is to pre-heat the oven to 400 degrees. Now prick the eggplants using a fork and put in on a baking sheet. You need to bake the eggplant by flipping the sides for about 35 minutes.
2. Now remove the stem and skin. Cut the eggplants into large pieces and take off the excess liquid.
3. Take a food processor to puree the parsley, eggplant, lemon juice, garlic, tahini along with 2 tbsp olive oil. You can season the content with salt and pepper.
4. Now the final step is to put the mixture in a bowl and add 1 tbsp of olive oil along with the pita wedges.
