Chutney Egg Sandwich
The Chutney Egg Sandwich is a yummy breakfast item that you will absolutely love. This sandwich is not only delicious but also very nutritious as it made using eggs, coriander leaves and mint leaves. Eggs are a rich source of protein, copper, iron, zinc, Vitamin D, Vitamin B6, Vitamin B12 and selenium; coriander leaves are a high source of dietary fibre, protein, Vitamin K, Vitamin C, magnesium, iron, manganese; and mint leaves provide dietary fibre, manganese, iron, Vitamin A, folate, Vitamin C etc.
Ingredients: 3-5 hard boiled eggs, 6-8 brown bread slices, butter, ½ cup chopped coriander leaves, ½ cup chopped mint leaves, 1 garlic clove, ¼ inch ginger, ½ tsp cumin seeds, lemon juice, 1 ½ tbsp. grated coconut, 1 green chilli slit, thinly sliced bell peppers, grated carrots and chopped lettuce.
1. Slice the eggs and set aside.
2. In a mixer jar, grind the chopped coriander leaves, mint leaves, garlic, ginger, cumin seeds, lemon juice, grated coconut, green chilli into a smooth paste.
3. Toast the bread with some butter, spread the green chutney, place the sliced eggs and top up with the vegetables.
4. Place another slice of bread on top and serve.
