Creamy Pumpkin Cashew Pasta

Pasta goes a long way in exciting the kids about their meal. When prepared with this mix of healthy ingredients, you child gets an abundance of nutrition and health, essential for his growth.

Ingredients: 16 ounce – pasta, shapes,  1 1/4 cup (1" cubes) – pumpkin, raw,  1 1/2 cup – cashews,  1 teaspoon – nutmeg,  1/2 teaspoon – salt, 1 tablespoon – olive oil, 1 teaspoon – sesame oil,  Pumpkin seeds, Fresh basil


1. Remove the skin of the pumpkin and place it in boiling water. Cook until pumpkin gets soft.

2. Place the cashews in hot water and let them remain soaked for 10 minutes.

3. Remove the softened pumpkin form the water and place it with the cashews, nutmeg and salt. Blend to get a creamy texture.

4. Cook pasta. In a large skillet, heat olive oil and sesame oil. Add pumpkin sauce to it and mix well. After draining the pasta, add them to the mix. Coat the pasta with the sauce well.
