Mushrooms are wonderful sources of Vitamin D. In addition, they boost our immune system, provide antioxidants to the body, boost metabolism and are excellent for the health of the bladder. Mushroom cutlets are an easy to make dish that will help derive all the benefits that this wonder food has to offer. 

Ingredients: Cleaned and sliched mushrooms ( 150-200 grams), 2 large boiled potatoes, one cup mixed vegetables (boiled), two large onions finely chopped, one teaspoon of garlic paste, green chillies (as per taste), 1 teaspoon each of chilli powder,garam masala and turmeric powder, half a cup of egg whites, 2 ½ tablespoons of bread crumbs, 2 teaspoons of chopped coriander leaves, salt to taste and oil. 

 Steps: 

 1. Mash the potatoes and set aside.

 2. Heat oil and add onions, green chillies, spice powders, garlic paste and fry. Fry the mushrooms and mixed vegetables along with this. 

 3. On cooling, mix this with the mashed potatoes. Roll into a shape of your choice. 

 4. Coat the cutlets in a mixture of egg whites and bread crumbs. 

 5. Fry in oil till golden.
