For Idli Podi: white urad dal - 1/2 cup, Chana dal - 1/4 cup, Garlic cloves - 8-10 nos chopped, Curry leaves - 1 sprig, Hing- 1/8 tsp, Salt- to taste, Cooking oil – 1 tsp. For Podi uthappam:
Dosa Batter - 2 cups, Idli Podi - As needed, Sesame oil/Gingely oil- As needed
1. Heat 1 tsp of oil and roast the dals and curry leaves. Cool and grind along with salt and roughly chopped garlic cloves.
2. Heat a non-stick pan and pour a ladleful of dosa batter. Make it thick and spongy. Drizzle a tsp of oil and cook on medium flame for few seconds.
3. After the uttapam is 3/4 th cooked on top, sprinkle idli podi all over the uttapam. Drizzle one more tsp of oil over the podi and flip the uttapam. Cook it for few seconds and remove it. Serve hot with chutney.
