Delicious Veg Quesadillas!
These are filled with veggies and cheese to provide your child with calcium and plenty of vitamins.
Ingredients: 6 tortillas, 1 cup grated Cheese, 200 grams Button mushrooms finely chopped, 2 Onions finely chopped, 1 Capsicum finely chopped, 2 Tomatoes finely chopped, Cooking oil for toasting, Salt- to taste, Black pepper powder- to taste
1. Heat oil in a pan, sauté the onions, mushrooms and green bell peppers until tender. Turn off heat. Allow the mixture to cool. Once cooled add in the tomatoes, salt and pepper and set aside.
2. Spread 2 tablespoons of the vegetable mixture over one half of the tortilla. Add about a tablespoon of cheese on top of this vegetable mixture.
3. Fold the tortilla covering the mixture into a half moon shape. Toast on a griddle or frying pan on both sides until the tortillas are lightly crisp.
4. Slice the quesadillas and serve with any dip of your choice.
