Delightful Cauliflower with Penne
This dish consists of cauliflower which is rich in protein and Vitamin C. The recipe is interesting which offers a savoring taste along with a good level of nutrients.
1. The first step is to take a large pot. Fill it with water to boil. Add salt and put pasta in it. Let it boil. Make sure when you drain the pasta reserve ½ cup of the cooking water.
2. Take a big skillet and add EVOO. To this add onion and garlic. Cook it for 2-3 minutes. Now add raisins and lemon zest.
3. Add the chicken stock along with saffron. Stir the content on simmer.
4. Boil the cauliflower separately for at least 12 minutes and drain the water. Mash the cauliflower and add it to the saffron mixture.
Now add butter, pasta and the remaining pasta water. Add cheese in the end and let it cook. This is a healthy dish which has been blended with exciting flavors!
