Gluten Free Mexican Mini Quiches
The idea behind Sundays is always fun, food and laughter. On Sundays treat yourself with some yummy gluten free Mexican mini quiches. This is delicious as well as healthy. Chicken, cheese, both are high in protein and adding some flavours to it will be all the more ideal for the Sunday brunch.
Gluten free, non stick cooking spray, shredded chicken, 1 ½ cup shredded cheddar cheese ,1 (4 ounce) can mild green chillies, diced, ½ cup gluten free all purpose flour, ½ teaspoon baking powder, ½ cup buttermilk with 1 teaspoon lemon juice stirred into it, ½ cup sour cream, 2 large eggs (lightly beaten), 2 tablespoon fresh chives (minced), ½ cup cilantro leaves (minced), 1 cup prepared salsa.
1. Preheat oven to 375 degrees. Lightly spray a standard muffin pan with cooking spray.
2. In a large mixing bowl combine all the ingredients with a spoon until well mixed. Spoon the mixture into the prepared muffin tins.
3. Bake for 30 minutes until browned and set. Run a dinner knife around the edges of the quiches and remove from the pan.
4. Serve them with your favourite salsa, some extra sour cream and cilantro on the top.
