Gnocchi Tomato Bake
Gnocchi tomato bake is an international dish which you can easily prepare at home using this recipe. Gnocchi is a rich source of Vitamin A, Vitamin C, iron, Vitamin D, riboflavin, thiamine, niacin, Vitamin B6, phosphorus and selenium.
Ingredients: 1 tbsp. olive oil, 1 onion chopped, 1 red bell pepper deseeded and chopped, 1 garlic clove crushed, 400 gm chopped tomatoes, 500gm gnocchi, basil leaves, 125 gm mozzarella cheese.
1. Heat oil in a pan and sauté the onions and chopped bell peppers for about 5 minutes. Add the garlic, stir fry and then put the chopped tomatoes.
2. Cook till the tomatoes are soft and pulpy. Add the gnocchi and simmer for about 10-15 minutes.
3. Add the basil leaves when the sauce has thickened.
4. Transfer the gravy into a baking tray. Tear the mozzarella cheese into chunks and add it on top of the gravy. Grill for 5-6 minutes till the cheese has melted and is golden in colour.
