Healthy and Tasty Toor Dal Soup
This soup is the perfect idea for a complete meal. It is tasty, filling, and very healthy. Dals provide proteins, minerals, and carbohydrates, which makes this soup a healthy choice.
Ingredients: ½ cup toor dal, 1 tsp butter, 1 chopped onion, 1 garlic clove, salt, 2 tbsp yogurt, 1 tbsp grated cucumber, 1 tbsp chopped mint leaves, and pepper.
1. Wash, soak, and boil toor dal.
2. Heat butter and sauté’ onion and crushed garlic clove. Add salt and cooked toor dal along with the stock. Boil for few minutes, cool and blend in a mixer.
3. Make a yogurt topping with yogurt, cucumber, mint leaves, salt and pepper. Beat well to form a smooth salad.
4. Pour the soup into a bowl and garnish with a dollop of yogurt salad and serve.
You can serve this soup with toasted whole wheat bread, cut into finger-like shapes.
