Healthy Broccoli Peanut Poha
Poha is widely loved and a commonly made breakfast. This recipe of veggie Poha is a healthier version of it. Broccoli is a good source of vitamin B1, protein and calcium. With the combination of peanut this delicacy becomes rich in fiber and fatty acids.
Oil-1tbsp, Poha-1cup, Broccoli-1/2cup(roughly grated), Peanuts-1/4cup(roasted and crushed coarsely with a rolling pin{belan}), Onion-1small, Turmeric powder-a pinch, lemon juice-1 tsp, cumin seeds-1/4tbsp, Salt as per taste, Coriander for garnishing.
1. Wash broccoli and roughly grate it. Boil the broccoli with 1 cup of water. Broccoli should be cooked properly but it should not become very soft. Switch off flame and keep broccoli aside.
2. Wash poha 4-5 time properly strain all the water. Now add turmeric powder, lemon juice and salt on poha and keep it aside for 15 minutes
3. Now chop onion and coriander.
4. Heat oil in a pan, add cumin seeds and sauté it properly.
5. Now add peanuts and sauté it again.
6. Add broccoli and sauté it yet again.
7. Finally add poha, and mix well and cook for 2-3 minutes.
8. Switch off the flame and cover the pan fully with a plate for 2 minutes.
Yummy poha is ready to eat.
