Let’s guess, you love laddus, right? Well, here we have a unique laddu recipe with paddy and jaggery! Jaggery cleanses the body, acts as a digestive agent, and sweetens your food in a healthy manner.
2 cups broken puffed paddy (laayi), 150 grams sticky jaggery, 1-2 tablespoons water, 2 tablespoons black sesame seeds (til), 10-12 broken cashew nuts, 4-5 cardamom powder, ghee or oil to grease the palms.
1. Dry roast the sesame seeds and cashews.
2. In a kadhai/wok, add 1-2 tablespoons of water, add the jaggery and stir on a very slow heat until it is mixed well and the mixture begins to froth.
3. Turn off the flame and allow to cool for a few seconds. Add the cardamom powder, roasted sesame seeds & cashew nuts and stir well. Add the puffed paddy in parts, while stirring to mix. Do this quickly as you need to make the laddus before the jaggery cools & becomes hard.
4. Grease your palms with ghee and roll laddus using the mixture. Cool and serve.
