Lamb and Mint Flatbread
There are numerous dishes which can be prepared using bread. This particular dish can be served for lunch or during the snack time. You would require mint leaves, fresh lemon juice, parsley leaves, garlic, flatbread (toasted), Greek yogurt and ground lamb. Lamb and yogurt makes this dish high on protein and calcium.
1. Take a processor. Add parsley leaves, mint leaves, fresh lemon juice, EVOO and garlic. Mix it well.
2. In a skillet add oil and cook the lamb along with cumin. Heat it over medium flame for at least 7 minutes. Season the lamb with salt and pepper.
3. Cover the bread with yogurt, lamb and pesto.
