Lovely Green Butterflies In A Bowl
This Farfalle pasta recipe is a healthy dose of iron. Adding milk and cheese gives it a lovely colour and the added benefit of calcium. This beautiful looking dish is sure to kick in your imagination and a second serving would be much in demand.
Ingredients: 2 cups of spinach finely chopped, 2 tbsp butter, ½ cup spring onion greens chopped, ½ cup cheese spread, 1 ½ cup milk, salt, pepper, 1½ cups cooked farfalle pasta and grated cheese.
1. Blanch spinach in boiling water and then wash in ice cold water. Blend to form a smooth puree.
2. Heat butter in a pan and sauté spring onion greens for 2 minutes.
3. Add the spinach puree, cheese spread, milk, salt, and pepper. Mix well. Bring to boil.
4. Add cooked farfalle pasta in the sauce and serve with a garnish of grated cheese.
