Are you struggling to make kurma with vegetables? No worries – with our Vegetable Kurma recipe, loaded with vitamins and minerals, you can prepare it in no time! 

Ingredients: Mixed Chopped Vegetables – 1 cup (parboiled), Onion – 1 chopped, Tomato – 1, Ginger Garlic paste – 2 tsp, Garam masala powder – 1 tsp, Coriander powder – 1 tsp, Coriander leaves – 1/2 tbsp, Water- 1 cup, Salt – to taste.  To Grind To A Paste: grated coconut – 1/2 cup, Cashews – 4, Poppy seeds – 1/2 tsp, Fennel seeds – 1 tsp, Split roasted gram – 2 tsp, Cloves – 2, Cinnamon – 1/2 inch piece, Cardamom – 1. To Temper: Oil – 1 tbsp, Bay leaf – 1, Curry leaves – few

Steps:

1. Grind the ingredients under ‘to grind’ to a fine paste. 

2. Heat oil and add the items under ‘to temper’. Add ginger garlic paste and onion. Saute well until slightly browned.

3. Add chopped tomatoes, fry until mushy.  Add coriander powder, garam masala powder, coconut paste, and 1 cup water and boil for 5 mins. Add the veggies and salt.

4. Simmer till you get a thick kurma consistency. Garnish with chopped coriander leaves and serve.
