Mushroom omelettes are easy to prepare and they are highly nutritious. Mushrooms are a rich source of selenium, phosphorus, potassium, niacin, iron, Vitamin C, protein. Eggs are a rich source of protein, copper, iron, zinc, Vitamin D, Vitamin B6, Vitamin B12 and selenium.
Ingredients: 2 eggs, ½ cup sliced mushrooms, 2-3 garlic cloves chopped, 1-2 green chillies chopped, 1 onion sliced, ¼ cup sliced capsicum, a pinch of turmeric, salt, a pinch of cumin seeds, a pinch of pepper powder, 2 tsp. oil, chopped coriander leaves
1. In a bowl, mix the eggs, salt and spice powders.
2. Heat oil in a pan, splutter the cumin seeds and sauté the onions, capsicum and mushrooms till they are cooked. Add coriander leaves and set aside.
3. In the same pan, add a little more oil and pour the egg mixture.
4. When the omelette is almost set add the onions, capsicum and mushrooms. Flip and cook till both sides are done.
