Popeye Peanut Butter Hummus
Why buy dips when there is a healthy option for you to try. It contains Peanut Butter that has a rich source of proteins for body development, good supply of vitamins, minerals and antioxidants that is good for the immune system. Chickpeas provide proteins, fibers and other minerals which support bone development. Spinach contains protein, fiber, iron and other essential vitamins important for brain function, memory and mental clarity.
Ingredients: 2 cups cooked chickpeas, 3 tbsp Sundrop Peanut Butter, 2 tbsp fresh lemon juice, 2 tbsp extra virgin olive oil, ½ tsp cumin, 1 clove garlic mashed with a pinch of salt, ½ kg cooked spinach
1. Combine all the ingredients except spinach in a food processor or mixer.
2. Add 1/3 cup warm water and ½ tsp salt and process until smooth. Quickly pulse in spinach until mixed nicely.
3. Transfer to a serving bowl.
Enjoy this as an evening snack using it as a dip with pita bread, tortillas, plain crackers and even chips.
