Coconut is one of the tastiest fruits of all foods. This fruit has so many health benefits. It is highly nutritious and rich in fibers, vitamins C, E, B1, B3, B5 and B6 and minerals including iron, selenium, sodium, calcium, magnesium and phosphorous. Unlike cow's milk, coconut milk is lactose free so can be used as a milk substitute by those who are milk allergic. Coconut’s taste is mild and refreshing,kids like it very much. It can be used in various ways in Indian and international cuisines. So here is one refreshing recipe for your loved ones, Coconut milk shake.

Ingredients: Fresh coconut milk-150ml ,chilled milk -1cup, soaked Almonds-5, saffron- 5 to 6 thread(soaked in 2tsb of milk), Sugar or honey as per your taste, crushed ice-1cup

Steps:

1. Peel almond and put it in a blender along with coconut milk, chilled milk, saffron, sugar/honey and ice.

2. Blend it till it becomes smooth and creamy.

3. Pour it directly into a glass and garnish it with saffron threads and nicely chopped almonds.

Serve your kiddo this refreshing delight drink in breakfast or in evening.

Note:-if you like you can blend some fruits in this shake like strawberry,banana,blueberries, mango, etc .

Homemade coconut milk- Finely grated 2 cup coconut meat and one glass warm water ,put it these two in blender, till it become smooth, take all the mixture in a muslin cloth, tightly tie the muslin cloth and drain completely all coconut milk from the mixture.
