Roasted Vegetable Pasta Sauce
Cook a delicious meal for your child with the roasted vegetable pasta sauce recipe. This recipe combines the nutritional benefits of fresh vegetables and offers nutrients such as Vitamin K, Vitamin A, Vitamin C, Vitamin B complex, beta carotene, potassium, calcium, Vitamin C, Vitamin A, dietary fibre, folate, etc.
Ingredients: 1 red onion roughly chopped, 1 small eggplant roughly chopped, 1 small zucchini roughly chopped, 1 sweet red pepper roughly chopped, 1 yellow bell pepper roughly chopped, 1 green pepper roughly chopped, 1 tbsp. olive oil, 1 garlic clove finely chopped, 400gm of tinned whole tomatoes, 410 ml vegetable stock.
1. Preheat your oven at 200oC. Place the chopped vegetables on a baking tray and drizzle some olive oil on top.
2. Roast the vegetables for about 20-25 minutes and turn halfway. Cook again till the vegetables are soft and browned on the edges.
3. Transfer into a saucepan, add the tomatoes and vegetable stock, cover with a lid and cook for 20 minutes.
4. Puree in a blender till you get a smooth puree.
