Veg Sandwich

Veg sandwich is very easy to make and hardly takes any time. Besides being tasty, it is also highly nutritious as it is made from fresh vegetables, which are a rich source of Vitamin C, Vitamin A, folate, dietary fibre and potassium. 

Ingredients: 4 slices of brown bread, 2 tsps. butter, 1 tbsp. oil, ½ tsp. cumin, ½ tsp. ginger garlic paste, pinch of turmeric, salt, 2 green chillies chopped, 1 cup of chopped onions, carrots, capsicum, corn, beans; 1 tomato finely chopped, 1 tsp. pav bhaji masala, handful of coriander leaves. 


 1. Toast the bread slices in butter and set aside. 

 2. Heat oil in a pan, fry the cumin seeds. Saute the ginger garlic paste and add the tomatoes. Cook till they are pulpy and then add the chopped vegetables. Toss in the spice powders and salt and cook till the veggies are tender. Garnish with coriander leaves and set aside.

 3. Place the filling on a bread slice and place another slice on top. Heat on a tawa and serve the veg sandwich hot.
