Vegetable raita is a commonly served side dish. You can make this delicious dish at home easily but in a healthier manner. This recipe uses fresh vegetables for the raita, which are rich in Vitamin C, Vitamin A, iron, calcium, Vitamin B6, magnesium, dietary fiber, etc.
Ingredients: 1 cup yogurt, 1 carrot chopped, 1 bell pepper chopped finely, 1 cucumber peeled and chopped finely, 1 tomato finely chopped, 1 onion finely chopped, ¼ tsp black pepper, ½ tsp roasted cumin powder, salt.
1. Whisk the yogurt till it is smooth and creamy. Add the salt, roasted cumin powder and black pepper to it. Mix well.
2. Check the taste and add more spices if you need to.
3. Add all the chopped vegetables to the yogurt and stir.
4. You can garnish this vegetable raita with a few chopped coriander leaves before serving.
