Veggie Salad

Ingredients: 2 carrots chopped, 2 cucumbers chopped, 1 radish chopped, 1 large tomato chopped, 2 tbsp. pumpkin seeds, 1 tbsp. roasted sunflower seeds, ½ tbsp. sesame seeds, 1 tbsp. chopped cashews, 1 tbsp. chopped almonds, 1 tbsp. chopped pistachios, 1 tbsp. walnuts, 1 tbsp. extra virgin olive oil, 1 tsp. lemon juice, 3-4 basil leaves chopped, 1 tsp. finely chopped celery, salt, pepper. 


 1. Heat a pan and dry roast all the dry fruits till they are crisp and crunchy. Set aside. 

 2. In a salad bowl, mix all the chopped vegetables and set aside. 

 3. To prepare the salad dressing, mix the olive oil, lemon juice, basil leaves, celery, salt and pepper. 

 4. Drizzle the salad dressing over the chopped vegetables and sprinkle the roasted dry fruits on top.
