Yummy Burrito Bites!
These mini breakfast burritos are perfect for those who don’t want eat breakfast, yet you want to get a little healthy food in the bellies. Eating breakfast can help prevent those moody fits caused by low blood sugar; and the burritos help them in the process as they are rich in calcium which strengthen your bone.
3 tablespoon chopped bell peppers, 1 tsp Olive oil, 3 eggs (whipped slightly in a bowl), 1 tablespoon water, 2 (8 inch) whole wheat flat bread.
1. Cook peppers with oil or cooking spray. Remove peppers from the pan.
2. Whisk eggs and water together, cook egg/water mixture over hot pan, without scrambling them. Move egg inward to cook although through, and flip, so you have a large “friend egg”. Cut in half and place one egg in each flat bread.
3. Add the cooked peppers to the center of your flat bread and roll up.
4. And cut cross-ways like sushi and serve with tomato ketch-up.
This is a great recipe to start your day ,so have some of those peppers and eggs which are high on protein, vitamin and fibre.
