Yummy Carrot Rice
For the busy days, here is a quick, tasty, and healthy rice recipe. Carrots have a natural sweetness that most of us are fond of. Loaded with vitamins and minerals and rich in carotenes and vitamin-a, carrots are a wonderful vegetable.
Ingredients: 1 tbsp oil, ¼ tsp mustard seeds, 1 tsp urad dal, a bunch of curry leaves, 1 chopped onion, 1 tsp ginger-garlic paste, 1 cup grated carrot, 3 tbsp peas, salt, a pinch of garam masala and chopped coriander, 1 cup cooked cooled rice and 1 tsp olive oil.
1. Heat oil and add mustard seeds, urad dal, and a bunch of curry leaves.
2. Add onion and sauté until golden brown.
3. Add ginger-garlic paste.
4. Add carrot and peas.
5. Add salt and cook until the vegetables are done.
6. Add a pinch of garam masala and chopped coriander.
7. Add rice and olive oil.
8. Mix well and serve.
This rice tastes great with plain curds too.
