Are you in search of a cooling dish for your little darling during the hot summer days? Here is a lovely curd rice recipe just for you! The rice is great for providing carbohydrates, while the curd is packed with calcium.

Ingredients: 2 ½ cups fresh curds, 3 cups cooked rice, 2 tbsp oil, 1 tsp mustard seeds, 2 tsp urad dal, 6 curry leaves, 2 tbsp finely chopped coriander, salt to taste

Steps:

1.   Combine the rice and 2 tbsp of water in a deep bowl and mash it lightly.

2.   Add the curds and salt, mix well and keep aside.

3.   Heat the oil, add the mustard seeds and urad dal, and sauté. Add curry leaves. 

4.   Add the tempering and coriander to the prepared curd-rice mixture and mix well. Serve immediately or chilled.

This is a wonderful recipe especially for summer, so try it out without delay!
