Ingredients: 1 tbsp. vegetable oil, 3 garlic cloves, 2 medium onions, 1/2 tsp. salt, white pepper, 2 tbsp. minced chives, 2 tbsp. extra-virgin olive oil, 4 cups vegetable broth, 1 tbsp. finely chopped parsley.
1. Heat the vegetable oil in a large pot. Now, to this add onions, salt. Stir occasionally until the onion grows soft.
2. Add now garlic and cook until the liquid completely evaporates.
3. Next step is to stir cauliflower and broth. Bring it to a boil. Reduce the heat and cook until the cauliflower is soft, 20-25 minutes.
4. In 3 batches, you need to whirl the soup in a blender. Take atleast 3 min for each batch.
5. Stir it together and add salt.
6. Take a small bowl, add olive oil, parsley and chives. Ladle the soup into bowls and decorate with herbs.
