Delicious Potato Masal Curry
Wondering what to have with puris? Serve some delicious potato masala curry. Potatoes are an excellent source of carbohydrates and Vitamin C.
Ingredients: Potatoes (boiled) – 3 crumbled, Onion– 1 chopped, Tomato – 1 chopped, Ginger – 2 inch piece chopped, Mustard seeds – 1 tsp, Turmeric powder – ½ tsp, Curry leaves – 1 sprig, Coriander leaves 2 tbsp, Salt – to taste, Oil – 1 tbsp
1. Heat oil. Add mustard seeds and when they splutter, add onion, ginger, curry leaf and sauté for 2 minutes.
2. Add tomatoes and cook over low flame till they become mushy.
3. Add the potatoes with 1 cup water, turmeric powder, salt and let it come to a boil.
4. Cook over low flame for 57 minutes. Garnish with chopped coriander leaves and serve with puris.
