Innovative Cornmeal Idli
Put a twist on regular idlis by trying this innovative corn idli recipe! Corn is an excellent source of carbohydrates, Vitamin B6 and Magnesium.
Ingredients: Broken Yellow Corn - 1.5 cup, Thick Unsour Curd- 1 cup, Water as needed, Salt to taste, Oil - 1 tsp + for greasing idli plates, Mustard Seeds - 1 tsp, Urad Dal- 1 tsp, Eno Fruit Salt - 1 tsp
1. Take broken corn in a mixer and powder it finely. Add curd and puree it finely. Add salt. Let it sit for 30 mins.
2. Heat oil in a pan, crackle in mustard seeds and urad dal. Pour this into the batter and mix well. Add eno salt.
3. Grease idli plates and fill idli moulds. Cover and steam for 15 mins. Serve with chutney.
