Light and Easy Pongal
Here is a quick, easy, and friendly version of pongal that can become a part of your daily lunch menu. Made with moong dal and rice, this pongal is rich in vitamins, calcium, potassium, fibre, iron, and carbohydrates.
Ingredients: 1 cup rice, ½ cup moong dal, 5 cups of water, 2 tbsp ghee and add ¼ tsp mustard seed, ½ tsp coriander powder, ½ tsp jeera powder, 4 cashew nuts, 7-8 raisins, a pinch of hing, a pinch of turmeric and salt.
1. Dry roast rice and moong dal separately.
2. Wash and pressure cook together in water for 4 whistles.
3. In a pan, heat ghee and add mustard seed, coriander powder, jeera powder, cashew nuts, raisins, a pinch of hing, and a pinch of turmeric.
4. Pour this on the rice, add salt and mix well.
5. Serve warm.
This pongal is highly recommended as it is easy to digest and very nutritious.
