Ingredients: Vermicelli -1 cup, Sooji -1/2 cup, Curd - 1 cup, Salt – to taste, Oil - 1 tbsp, Mustard seeds - 1/2 tsp, Urad dal – 1 tsp, Curry leaves - 10-12 (chopped), Ginger - 1/2 inch piece (chopped), Eno salt - 1 tsp
1. Roast the sooji and vermicelli and mix with the curd to make a batter.
2. Heat oil and temper mustard seeds and urad dal. Add curry leaves and ginger to it. Add this to the batter with salt and mix. Cover and set aside for 15-20 minutes.
3. Add eno salt to the vermicelli batter and mix well. Pour the mixture into idli moulds. Steam for 10-15 minutes. Serve hot with chutney.
