Soft Balls of Kanchagolla
Instead of having chocolates and toffees, indulge the sweet tooth with these delectable kancha gollas made from fresh cottage cheese. These will keep all happy while supplying with rich amounts of calcium.
Milk- 2 litres, lemon juice- 4 tbsp, green cardamom powder- ¼ tsp, granulated sugar- 5 tbsp, fine muslin or cheesecloth, water: 5 tbsp
1. Boil milk and add lemon juice so that the milk starts to separate. Pour the chenna (the cottage cheese) and the whey into a cheesecloth or a muslin cloth. Tie the cloth and hang it up for 20 min so the extra whey drips out.
2. Remove cheese from the cloth and mash thoroughly until there are no lumps.
3. Add the cardamom powder and the sugar. Knead well once again for 5-7 min.
4. Form the dough into equal-sized balls with your palms. Serve fresh.
