Urad Dal Khichdi
Urad dal is one of the richest sources of protein and Vitamin B. It is also rich in potassium, magnesium, calcium, folic acid, iron etc. Urad dal khichdi is the easiest and simplest way to ensure that all the nutritional benefits that urad dal has to offer.
Ingredients: 1 ½ tbsp. rice, 1 ½ tbsp. urad dal, 1 1 /2 cups water, 2-3 tbsp. non starchy vegetables, a pinch of cumin powder, salt, ghee.
1. Wash and clean the rice. Soak in water for about 4 hours.
2. Keep the flame low, put all the ingredients into a pressure cooker and cook till you get 2 whistles.
3. When the pressure comes down, remove the lid and mash the contents.
