Vegetable Stuffed Idli
Are you bored with idlis? Make some stuffed idlis instead. These are loaded with the goodness of vitamins and minerals from the lovely veggie filling.
Ingredients: For The Idli Batter: 1 cup rice semolina, 1/4 cup poha, 1/4 cup urad dal, salt to taste. For The Vegetable Stuffing: 1/2 cup finely chopped mixed vegetables, 1/4 cup boiled green peas, 2 tsp oil, 1/2 tsp urad dal, 1/2 tsp mustard seeds, 3 to 4 curry leaves, salt to taste.
1. Soak the idli rawa, poha and urad dal for 2 hours and drain well. Blend with ½ cup of water till smooth. Add salt and keep aside to ferment in a warm place for 6 to 8 hours.
2. Heat the oil, add the urad dal, mustard seeds and curry leaves and sauté. When the seeds crackle, add the vegetables and salt and sauté for 2 to 3 minutes. Keep aside.
3. Put 1 tbsp of the idli batter into each greased idli mould. Put 1 tsp of the prepared vegetable stuffing over the idli batter and finally top it with ½ tbsp of the idli batter over it.
4. Steam for 12 minutes. Serve hot with sambhar and coconut chutney.
