 The presence of egg in the Veggie McMuffin offers Vitamin A, protein and Vitamin D. Moreover, baby spinach is also used as a prime ingredient which offers Vitamin C, potassium, Vitamin B-6 and iron. You can serve this dish either during lunch or somewhere in the evening time. 

Ingredients:  12 eggs, 2 cups baby spinach chopped, 12 cheese slices and 12 whole wheat English muffins. 

Steps:

 1. You need to spray the muffin tin using cooking spray and then pour the whisked eggs as well as veggies. 

 2. Bake the content for 20-22 mins at 350 degrees. 

 3. Assemble the sandwiches, cheese, English muffin, and egg.

 4. Wrap it in a foil to freeze the entire sandwich. In order to reheat, place the foil-wrapped sandwich in the already preheated oven managed at 350 degrees for 30 mins.
