Yummy Pumpkin And Potato Mash with Rice
Pumpkin is a great vegetable, it can go with any flavor. It also contains Vitamin A which improves your baby vision, rich source of antioxidants and potassium which plays an important role in your baby's development. Your little one needs every color vegetable, at this stage so here is a full of nutrients recipe for him. Pumpkin and potato rice. You can serve it at lunch or at dinner time so let’s start the preparation!
Ingredients: 1 cup each of pumpkin and potatoes chopped in cubes, 5 to 6 garlic cloves, 1 cup of rice, 2 cups of vegetable stock, 1/2 tsp parsley chopped.
1. Wash the rice with water twice, peel the vegetables, wash and cut it in cubes.
2. Take a pressure cooker add rice, potato, garlic, pumpkin and vegetable stock in it and allow 3 to 4 whistles on medium flame.
3. When the contents cook completely, take a masher and mash it in the cooker so that chunks do not remain.
4. Now add parsley, if you wish you can add a few drops of ghee or butter too.
Serve your little one once it cools down at room temperature.
Note: If you do not have vegetable stock you can use water instead of it.
